Cuban Chicken Black Bean Rice Bowl Recipe

Here is everything you need:

For the Chicken

  • 2 large chicken breasts, diced
  • 4 garlic cloves
  • 3 Tbsp. vegetable oil
  • 1 Tbsp. dried oregano
  • 1 Tbsp. chili powder
  • 2 Tbsp. ground cumin
  • salt and pepper to taste
  • Zest and juice of 1 lime
  • Zest and juice of 1 orange

For the Black Beans

  • 2 cans black beans, drained
  • 3 cloves garlic, minced
  • ½ yellow onion, diced
  • 2 tsp. vegetable oil
  • 1 tsp. smoked paprika
  • 2 tsp. ground cumin
  • salt and black pepper to taste

For the Cilantro-Lime Rice

  • 1 ½ cups Jasmine rice
  • ½ cup cilantro, chopped
  • 3 cups low sodium chicken broth
  • ½ yellow onion, diced
  • 1 tsp. vegetable oil
  • Zest and juice of 2 limes
  • salt and black pepper to taste

Here’s how to make this Cuban Chicken Black Bean Rice Bowl

The Chicken

First put the oregano, cumin, chili powder, salt, pepper, garlic and the zest and juice of lime and orange into a blender to prepare the chicken marinade. Blend them until you get a smooth mixture.

After that add the chicken to a bowl or a Ziploc bag and pour half of the marinade over it. Leave the chicken in this marinade for at least 30 minutes, or overnight.

Then heat the vegetable oil in a large pan over medium heat. Add the chicken and cook it for 10-12 minutes. Then add the remaining marinade to the pan and cook for about 5 more minutes.

The Black Beans

First, you need to heat the vegetable oil in a large pan over medium heat. Then add the onions and cook them for 3-4 minutes, until they become soft. Then add the garlic and cook for 30-60 seconds more.

After that add the black beans and the spices and cook for 5-10 minutes. Mash about half of the beans in the pan with a potato masher, mix everything and add salt and pepper to taste.

The Cilantro Lime Rice

First, heat the vegetable oil in a large saucepan over medium heat. Then add the onion and cook it until it becomes soft. After that add the rice and cook it for about a minute before adding the chicken broth.

Cook it until it boils on high heat and then reduce the heat and allow it to simmer.  Cook for about 15 minutes with the lid on, until most of the liquid is absorbed.

Then turn the heat off and leave it with the lid on for 5 more minutes. After that, you can add the cilantro, lime and salt and pepper to taste.

To serve, divide the cilantro lime rice among bowls. Add the chicken and black beans as a topping. You can also add mango salsa and fried plantains if you want. Bon appetite!
